Chocolate (and White Chocolate!) Pretzel Fudge

Oh Pinterest, how do I love thee? Let me count the ways.

After being in Saranac for a little over a week, the hubs and I are still working on re-stocking our pantry. You know, things you don't have to buy often like ketchup or mayonnaise (well, I hope you don't have to buy mayo often, that's gross). That being said, I wanted to bring some baked goodies to a couple get-togethers last week but only had a limited number of items to work with. So I went to God's-gift-to-right-brained-crafty-girls  Pinterest to find some answers.

I happened to have milk chocolate chips, white chocolate chips, pretzels, and a can of sweetened condensed milk in the pantry so I looked through my food board for anything that might include those ingredients. Low and behold, at the bottom of the board was this little baby:

It's a recipe off of Eat At Home for Chocolate Pretzel Fudge and I had almost all the ingredients it called for. Yipee!

I tweaked it a little to fit what I had available annnnd I kinda forgot one ingredient (whoops) but it still turned out super good (and super rich)!

I took it with me to camp to give to the Staff on Friday and everyone loved it. Seriously, there's no better self-esteem booster than giving sweets to the Maintenance Department. I swear I could give them chocolate-covered tree bark and they would love it. Either they are ridiculously easy to please or just really, really nice... probably both. Such sweet guys.

You can find the original recipe here, credit going to Tiffany at Eat At Home but, because I altered the recipe, I'll show you what I changed along with my forgotten ingredient. An easier recipe to copy and past is at the bottom of the post.

You will need:
  • 12oz. bag milk chocolate chips
  • 1 cup white chocolate chips
  • 14oz. can heaven's nectar sweetened condensed milk
  • 2 tbsp. milk
  • 1 cup broken pretzel pieces
  • extra pretzels to make the top pretty

First, I melted the milk chocolate chips and the sweetened condensed milk in a double boiler over the stove. You can definitely melt them in the microwave but that always results in an epic, burned fail for me so I stick with the double boiler.

I should have added the milk to the double boiler as well but that is the little ingredient I forgot - got a wee bit too excited. The milk simply adds to the creamy texture, not the flavor, so the fudge still turned out great but I would definitely add it the next time I make it.

The original recipe called for 1 cup of semi-sweet chocolate chips instead of the white chocolate and you would have added this to the double boiler as well but I wanted the white color of the white chocolate chips to stay intact so I didn't melt them in with the milk chocolate.

Once the chocolate was melted, I stirred in the pretzels and then I stirred in the white chocolate chips (one after the other, not both at the same time). The heat from the melted chocolate only caused the white chocolate to slightly melt and left a pretty marble effect as I mixed it together.

I poured the fudge into a parchment-lined square baking dish and garnished it with pretzels, leaving the pretzels whole and placing them inside imaginary lines I knew I would cut after the fudge had hardened. That way everyone got one :) Make sure you press the pretzels in there pretty good so they adhere to the fudge.

I let the fudge harden in the refrigerator for at least 3 hours, removed the parchment and cut the fudge into squares. I've found that a large chef knife that has been placed under hot water in between slices really helps with making clean cuts.

So there you have it, easy peasy! And pretty good too! I'll be honest, it's super sweet, I could just barely finish the piece I had because it was so rich (or maybe, ahem, because it was so big). But sometimes rich is good! And rich mixed with salty pretzels is really good!

Now, if you go to my food board to look for this recipe, you'll no longer find it there! It's now under my Yay or Nay board. I started the Yay or Nay board a while ago so I could have a place to put pins that I had actually tried as well as note whether or not they were indeed worth doing again. This recipe went down in history as a "Yay."

I also made some fun biscotti that I found on Pinterest over the weekend but I'll have to post about that tomorrow.

Happy fudge making and happy pinning!
